Turkey Barbecue On Buns

8 servings

1/2 tsp olive oil 3 tbsps white vinegar 
1/2 c celery, sliced 2 tbsps light brown sugar, packed 
1/2 c onions, chopped 1 tsp salt 
1/2 c bell peppers, chopped 1/2 tsp dry mustard 
8 ozs turkey light meat, skinless, cooked and cubed 8 whole wheat hamburger buns 
1 c no-salt-added ketchup  
In a skillet, heat oil over medium heat. Add celery, onions, and bell peppers. Cook until lightly browned. Add turkey, ketchup, vinegar, brown sugar, salt, and mustard. Reduce heat to low and simmer 15 minutes. Spoon turkey barbecue on the bottom halves of the buns. Cover with top halves and serve. Serve with green beans and potato salad.
