Tropical Coffee Cake

9 servings

1 1/2 c unbleached flour  2 whole eggs 
1 c granulated sugar  8 ozs crushed pineapple, drained 
2 tsps baking powder Topping: 
1/2 tsp salt  3 tbsps granulated sugar 
8 ozs light sour cream  1 tsp cinnamon 
2 tbsps olive oil  
Preheat oven to 350. Prepare a 8" x 8" square dish with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, and salt; set aside. In another mixing bowl, combine sour cream, oil, eggs, and pineapple. Add to dry ingredients and mix until thoroughly combined. Pour batter into prepared dish. In a small bowl, combine remaining sugar and cinnamon. Sprinkle evenly on top of batter. Bake for 35 minutes, or until toothpick inserted in center comes out clean.
