Spicy French Toast

16 servings

1 c egg whites, slightly beaten 1 tbsp cornstarch 
1 c pumpkin pie mix 16 slices whole wheat bread slices, stale 
1/4 c fat-free milk  
In a food processor, combine egg whites, pumpkin pie mix, milk, and cornstarch. Blend until smooth. Dip bread slices in egg white mixture. In a skillet that has been coated with cooking spray, over medium heat, add bread slices. Cook four minutes per side, or until golden brown. Turn and continue cooking three minutes more. Remove from pan and keeping warm. Repeat with remaining bread slices.
