Spiced Pumpkin Nut Breads

4  cups  unbleached flour, sifted  15  ozs  canned pumpkin 
2  cups  light brown sugar, packed  1  cup  apple juice 
1  tbsp  pumpkin pie spice  4  whole  eggs 
2  tsps  baking powder  1/4 cup  olive oil 
1  tsp  baking soda  2  tsps  pure vanilla extract 
3/4 tsps  salt  1  cup  walnuts, chopped 
Prepare two 9"x5" loaf pans with cooking spray; set aside. Preheat oven to 350. In a mixing bowl, combine sifted flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Add pumpkin, apple juice, eggs, oil, vanilla extract, and 3/4 cups walnuts. Mix just just until moistened. Spoon evenly into prepared loaf pans. Sprinkle remaining walnuts over top of loaves. Bake for one hour or until toothpick inserted in center comes out clean.
