Sloppy Joe Meatball Subs

8 servings

1  lb  ground chicken breast skinless  6  ozs  no-salt-added tomato paste 
1/2 cup  bread crumbs  1 1/2 cups  water 
3/4 tsp  Italian seasoning  4  ozs  mozzarella cheese, shredded 
1/8 tsp  black pepper  4  pcs  submarine buns, halved 
1 1/2 ozs  sloppy joe sauce mix  
In a mixing bowl, combine, chicken, bread crumbs, Italian seasoning, and black pepper. Shape mixture into small meatballs to fit submarine buns. In a large skillet, brown meatballs until cooked through, or for 15 minutes. Add sloppy joe mix, tomato paste, and water. Mix well. Simmer for 15 minutes or until bubbling. Place meatballs evenly into buns. Spoon sauce over meatballs and sprinkle each with cheese.
