Ribbon Cookies

Adapted from
36 servings

1 c margarine, softened  10 drops food coloring, red 
1 whole egg  1/2 tsp rum extract 
1 tsp pure vanilla extract  1 oz unsweetened chocolate squares, melted 
2 1/2 c unbleached flour  10 drops food coloring, green 
1 1/4 c granulated sugar  1/4 c walnuts, chopped 
1 1/2 tsps baking powder  
In a mixing bowl, combine margarine, egg, vanilla extract, flour, sugar, and baking powder. Mix just until soft dough forms. Divide dough into thirds. Place each portion in separate bowl. Stir red food coloring and rum extract into first portion; stir in melted chocolate into second; stir green food coloring and walnuts into third. Refrigerate one hour. Divide each flavored dough into fourths; keep refrigerated. Remove two portions of each color to lightly floured surface. With floured hands, roll each into a eight inch long. Flatten each with rolling pin to one and a half inches width; square off rectangles. Stack doughs in following order, chocolate, red, and green. Press lightly; square sides and wrap. Repeat with remaining dough for another ribbon. Refrigerate overnight. Preheat oven to 375. Prepare baking sheets with cooking spray; set aside. Cut each ribbon crosswise into thirds. Place each piece, chocolate side down, on board. Cut lengthwise into six slices. Transfer to prepared sheets. Bake for 12 minutes, or until edges are lightly browned.
