Pumpkin Waffles

9 servings

2 1/2 c unbleached flour  1/8 tsp salt 
1/2 c raisins  1 c fat-free milk 
1/3 c light brown sugar, packed  1 c low-fat buttermilk 
2 1/2 tsps baking powder  1 c canned pumpkin 
1 tsp baking soda  3/4 c egg whites, slightly beaten 
3 tsps cinnamon  2 tbsps olive oil 
1 1/2 tsps ginger  
Heat Belgian waffle iron and spray with cooking spray. In a mixing bowl, combine flour, raisins, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt. Add fat-free milk, fat-free buttermilk, pumpkin, egg whites, and oil. Mix until moistened. Pour half cup batter per waffle waffle onto of hot waffle iron. Bake for four minutes, or as directed from your waffle iron instructions.
