Pumpkin Nut Breads

3 1/2 c  unbleached flour  1  tsp  pumpkin pie spice 
3  c  granulated sugar  30  ozs  pumpkin pie mix 
1 1/2 c  raisins  1/2 c  olive oil 
3/4 c  walnuts, chopped  2  whole  eggs 
2  tsps  baking soda  1/3 c  water 
1 1/2 tsps  salt  1/4 c  egg whites 
1  tsp  cinnamon  
Preheat oven to 350. Prepare three 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, raisins, walnuts, baking soda, salt, cinnamon, and pumpkin pie spice. Mix well. Add pumpkin pie mix, oil, eggs, water, and egg whites. Mix until moistened. Pour batter evenly between loaf pans. Bake for one hour or until toothpick inserted into center comes out clean.
