Pumpkin Granola Loaves

2  cups  unbleached flour  1/2 tsp  salt 
1 1/2 cups  whole wheat flour  2  cups  lowfat granola 
3/4 cup  granulated sugar  30  ozs  pumpkin pie mix 
2  tsps  baking powder  1/2 cup  egg whites, slightly beaten 
1  tsp  pumpkin pie spice  1/4 cup  olive oil 
1/2 tsp  baking soda  1/2 cup  lowfat granola, crushed 
Preheat oven to 350. Prepare two 8" x 5" loaf pans with cooking spray; set aside. In a mixing bowl, combine flours, sugar, baking powder, pumpkin pie spice, baking soda and salt. Mix well. Stir in two cups granola. Add pumpkin pie mix, egg whites, and oil. Mix until all is moistened. Pour pumpkin mixture into flour mixture; stir until just moistened. Spoon batter into prepared loaf pans. Sprinkle with remaining crushed granola. Bake for one hour or until toothpick inserted in center comes out clean. Cool completely.
