Pineapple Carrot Raisin Muffins

Adapted from
12 servings

2 c unbleached flour 1/2 c raisins 
1 c granulated sugar 1/2 c walnuts, chopped 
2 tsps baking powder 10 ozs crushed pineapple, undrained 
1 tsp cinnamon 2 whole eggs 
1/2 tsp ginger 1/4 c light margarine, melted 
1/2 c carrots, shredded 1 tsp pure vanilla extract 
Preheat oven to 375. Prepare 12 standard muffin cups with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, baking powder, cinnamon, ginger, carrots, raisins, walnuts, pineapple, eggs, margarine, and vanilla extract. Mix until blended. Fill each muffin cup with 1/3 cup or 2 ounces of batter. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
