Oatmeal Cookies

22 servings

1  c  unbleached flour  2  ozs  cinnamon applesauce 
1/2 c  granulated sugar  2  tbsp  margarine 
1/2 c  light brown sugar, packed  1/4 c  egg whites 
1  tsp  baking powder  1  tsp  pure vanilla extract 
1/2 tsp  baking soda  1 1/3 c  rolled oats 
1/2 tsp  salt  1/2 c  raisins 
Preheat oven to 375. Prepare a baking sheet with cooking spray; set aside. In a mixing bowl, combine flour, sugars, baking powder, baking soda, and salt. Add margarine, egg whites, vanilla extract, oats, and raisins. Mix until moistened. Drop batter by one ounce portions onto prepared baking sheet. Batter will be sticky. Bake for 10 minutes, or until cookies are browned. Cool completely.
