Oat Pancakes

2  cups  quick cooking oats  2  whole  eggs, slightly beaten 
1  cup  unbleached flour  1 1/2 cups  fat-free milk 
1/4 cup  granulated sugar  2  tbsps  olive oil 
2  tsps  baking powder  1  tsp  bottled lemon juice 
1  tsp  salt  
In a mixing bowl, combine oats, flour, sugar, baking powder, and salt. Add eggs, milk, oil, and lemon juice until all is moistened. Ladle in the batter, using 1/4 cup per cake. Cook for two minutes, then flip carefully and cook for two minutes more.
