Newton Muffins

Adapted from
12 servings

1 3/4 c unbleached flour  1 whole egg, slightly beaten 
1/4 c granulated sugar  1 c water 
1 tbsp baking powder  5 ozs fat-free Fig Newtons cookies, chopped 
2 tbsps light margarine, melted  
Preheat oven to 400. Prepare 12 standard muffin cups with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, and baking powder. Add margarine, egg, water, and chopped cookies. Mix until moistened. Fill each muffin cup with 1/3 cup or 2 ounces of batter. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
