Molasses Cake

Adapted from
12 servings

2 1/2 c unbleached flour  1 c molasses 
1/2 c granulated sugar  1 c water, hot 
2 tsps baking soda  1/4 c light margarine, softened 
2 tsps cinnamon  1 whole egg 
1 tsp cloves  8 ozs vanilla frosting 
1/8 tsp salt  
Preheat oven to 350. Prepare a 9" square dish with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking soda, cinnamon, cloves, and salt. In another mixing bowl, combine molasses, hot water, margarine, and egg. Add mixture to dry ingredients and mix well. Pour batter into prepared pan. Bake for 45 minutes, or until toothpick inserted in center comes out clean. When cake has cooled, spread with frosting.
