Mini Banana Nutmeg Muffins

Adapted from
18 servings

2 c unbleached flour 1/8 tsp salt 
1/2 c granulated sugar 1 whole egg 
2 tsps baking powder 3/4 c low-fat buttermilk 
1/2 tsp baking soda 1/2 c bananas, mashed 
1 tsp nutmeg 3 tbsps olive oil 
1/4 tsp allspice  
Preheat oven to 400. Prepare eighteen 1 3/4" muffin cups with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, baking powder, baking soda, nutmeg, allspice, salt, egg, buttermilk, bananas, and oil. Mix until moistened. Spoon 1/4 cup batter into each prepared cup. Bake for ten minutes, or until lightly browned.
