Impossible Cheesecake

Cheesecake:  16 ozs fat-free cream cheese, softened 
3/4 c fat-free milk Topping: 
2 tsps pure vanilla extract  1 c fat-free sour cream 
2 whole eggs  2 tbsps granulated sugar 
1 c granulated sugar  2 tsps pure vanilla extract 
1/2 c low-fat baking mix  
Preheat oven to 350. Prepare a pie pan with cooking spray; set aside. To prepare cheesecake, combine milk, two teaspoons vanilla extract, eggs, one cup sugar, baking mix, and cream cheese in a mixing bowl. Mix until smooth. Pour mixture into prepared pan. Bake, uncovered, for 45 minutes. Meanwhile to prepare topping, combine sour cream, remaining sugar, and remaining vanilla extract. Mix well. Spread over cooled cheesecake. Chill for several hours before serving.
