Honey of a Cookie

48 servings

2 1/2 cups  unbleached flour  2  tsps  baking powder 
1  cup  granulated sugar  1  tsp  pumpkin pie spice 
5  tbsps  butter, softened  1/4 tsp  salt 
5  tbsps  unsweetened applesauce  1  tsp  pure vanilla extract 
2  whole  eggs  1/2 cup  carrots, shredded 
1/4 cup  honey  
Prepare a baking sheet with cooking spray; set aside. In a mixing bowl, combine flour, sugar, butter, applesauce, eggs, honey, baking powder, pumpkin pie spice, salt, and vanilla extract. Mix until all is moistened. Fold in carrots. Cover and chill dough several hours. Preheat oven to 325. Shape dough into rounded one inch balls. Place two inches apart onto prepared baking sheet. Bake for 15 minutes, or until edges are lightly browned.
