Holiday Green Cake

16 servings

1/4 c walnuts, chopped 1 c light sour cream 
1/4 c granulated sugar 3/4 c refrigerated orange juice 
1 tbsp cinnamon 2 tbsps olive oil 
18 1/4 ozs white cake mix 1 tsp pure vanilla extract 
3 ozs pistachio pudding mix food coloring, green 
1 c egg whites, slightly beaten  
Preheat oven to 350. Prepare a 13"x 9" pan with cooking spray; set aside. In a small bowl, combine walnuts, sugar, and cinnamon; set aside. In a mixing bowl, combine cake mix, pudding mix, egg whites, sour cream, orange juice, oil, and vanilla extract. Mix well. Fold in enough green food coloring to desired shade of green. Spread batter into prepared pan. Sprinkle reserved walnut mixture evenly over top. Bake for 35 minutes, or until lightly browned around the edges. Cool completely.
