Hearty Meatball Soup

8 servings

1  lb  ground chicken breast skinless 1.25 ozs  onion soup mix 
1/2 c  whole wheat crackers, crushed  15  ozs  canned dark red kidney beans, drained 
2  tsps pizza seasoning  14 1/2 ozs  no-salt-added stewed tomatoes, undrained and cut up 
1/8 tsp  black pepper  1  c  baby cut carrots 
5  c  water  1  c  instant rice 
In a mixing bowl, combine ground chicken, cracker crumbs, pizza seasoning, and black pepper. Mix well. Shape into approximately 24 tiny balls. In a skillet, brown meatballs until cooked. Meanwhile, bring water to a boil in a stock pot. Add soup mix. Reduce heat; cover and simmer for ten minutes. Add cooked meatballs, beans, tomatoes and carrots. Simmer for 45 minutes, or until carrots are tender. Add rice. Cover and remove from heat. Let stand five minutes before serving.
