Golden Kolachky

Dough:  1 tbsp butter, softened 
1 c butter, softened  1/2 c granulated sugar 
8 ozs cream cheese, softened  1 tsp bottled lemon juice 
2 c unbleached flour Apricot Filling: 
Cream Cheese Filling:  8 ozs apricot pie filling 
8 ozs fat-free cream cheese, softened  1/4 c granulated sugar 
In a mixing bowl, combine one cup butter, eight ounces cream cheese, and flour. Mix until soft dough forms. Divide dough in half and place each half in a separate bowl with lid. Refrigerate doughs until firm. Preheat oven to 375. Meanwhile, to prepare Cream Cheese filling, combine remaining cream cheese, butter, sugar, and lemon juice. Mix well and set aside. Roll half dough out at a time, on floured surface to 1/8" thickness. Cut into 3" squares. Spoon one teapoon of Cream Cheese filling or apricot pie filling in center of each square. Bring opposite corners to center; pinching tightly together to seal edges. Fold sealed tip to one side; pinch to seal edges again. Lightly brush with water and sprinkle each with 1/4 teaspoon sugar. Place 1" apart on to unprepared baking sheets. Bake for 10 to 15 minutes, or until lightly brown on top.
There will be extra cream cheese filling. I froze the extra for a another time.
