Golden Caramel Bars

Adapted from
24 servings

Crust: 1 1/2 c light brown sugar, packed 
3/4 c powdered sugar 2 tbsps unbleached flour 
10 tbsps light margarine, softened 1 tsp pure vanilla extract 
1 1/2 c unbleached flour 1/2 tsp baking powder 
Bar: 1/2 tsp salt 
2 c granola, broken into pieces 2 whole eggs 
Preheat oven to 350. In a mixing bowl, combine powdered sugar and 1 1/2 cups flour. Cut margarine in with pastry cutter. Press mixture evenly onto bottom of unprepared 13" x 9" pan. Bake for 12 minutes, or until light golden brown. Meanwhile, in another mixing bowl, combine granola, brown sugar, remaining flour, vanilla extract, baking powder, salt, and eggs. Mix well. Mixture will be thick. Spread over top baked crust. Bake for 18 minutes, or until edges are brown. Cut into 3" x 1" bars.
