Fruit Bits Bread

Adapted from
12 servings

2  c  unbleached flour  1  c  cinnamon applesauce 
4  ozs  Sun Maid Fruit Bits  1/4 c  water 
1/2 c  granulated sugar  1  whole  egg 
2  tsps  orange peel, grated  3  tbsps  Country Crock Light Spread, melted 
2  tsps  baking powder  
Preheat oven to 350. Prepare a 8"x4" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, fruit, sugar, orange peel, and baking powder. Mix well. Add applesauce, water, egg, and spread. Mix until all is moistened. Pour batter into prepared pan. Bake for one hour or until toothpick insert in center comes out clean.
For the Sun Maid Fruit Bits, raisins, dried cranberries, etc., can be substituted. This recipe doubles well.
