Fig Filling

Adapted from California Fig Advisory Board

  • 16 ozs dried figs, chopped
  • 4 tbsps margarine
  • 2 cups water
  • 1/2 cup lemon juice
  • 1/4 tsp salt
  • 2 cups granulated sugar
Fig Filling
In a large saucepan, combine chopped figs, margarine, water, lemon juice, and salt. Mix well. Simmer for 15 minutes, or until figs are tender. Stir in sugar and simmer 20 more minutes, or until sugar is completely dissolved. Remove from heat and cool completely. Place mixture in a food processor container and pulse for a few minutes. This recipe works very well with the Kolacky recipe and filling may be used as a jam for toast. Yields: Two cups or serves 16 - two tablespoons each
