Fiesta Turkey With Cream Sauce

10 1/2 ozs cream of roasted garlic soup, condensed 10 ozs frozen mixed vegetables, thawed 
1/2 c fat-free sour cream 1/2 c onions, chopped 
2 tsps bottled lemon juice 1/2 c low-fat cheddar cheese, shredded 
1/2 tsp cumin 2 c long-grain white rice, cooked 
8 ozs turkey light meat, skinless, cooked and cubed  
In a small bowl, combine soup, sour cream, lemon juice, and cumin; set aside. In a skillet, cook turkey, vegetables, and onions until turkey is no longer pink and vegetables are tender. Stir in soup mixture. Simmer over low heat for five minutes. To serve, sprinkle with cheese and serve over rice.
