Crustless Bacon & Egg Quiche

8 servings

2 ozs low-fat bacon, cooked and crumbled 2 tbsps light margarine, melted 
1/2 c fat-free milk 1/8 tsp black pepper 
1/2 c low-fat baking mix 1 c low-fat cheddar cheese, shredded 
3 whole eggs  
Preheat oven to 350. Prepare a 9" pie pan with cooking spray; set aside. In a food processor, combine milk, baking mix, eggs, margarine, and black pepper. Process for 15 seconds. Pour into prepared pan. Sprinkle bacon and cheese on top; gently press below surface with a fork. Bake for 30 minutes. Let stand 10 minutes before serving. Serve with toast.
