Cruise Ship Mustard Dressing

Adapted from
16 servings

3/4 lb low-fat tofu 1/2 tbsp granulated sugar 
1/3 c water 1/4 tsp salt 
3 tbsps dijon mustard 12 ozs leaf lettuce, torn into pieces 
2 tbsps bottled lemon juice 1 c mushrooms, sliced 
1 tbsp parmesan cheese 1 c croutons 
In a food processor, combine tofu, water, mustard, lemon juice, parmesan cheese, sugar, and salt. Process until smooth. Serve on lettuce topped with mushrooms and croutons.
Yields: 1 cup (sixteen one tablespoon servings).
