Cranberry Breads

Adapted from
32 servings

2 1/4 c unbleached flour 1 c canned pumpkin 
2 c granulated sugar 1 c fresh cranberries, chopped 
1 tbsp pumpkin pie spice 1/4 c olive oil 
1 tsp baking soda 1/2 c egg whites, slightly beaten 
1/4 tsp salt  
Preheat oven to 350. Prepare two 8" x 4" loaf pans with cooking spray and flour; set aside. In a mixing bowl, combine flour, sugar, pumpkin pie spice, baking soda, and salt. In another mixing bowl, combine pumpkin, cranberries, oil, and egg whites. Add wet ingredients with dry ingredients just until moistened. Pour mixture evenly into prepared pans. Bake for one hour , or until toothpick inserted in center comes out clean.
