Cranberry Banana Bread

Adapted from
12 servings

2 c unbleached flour  1 c bananas, mashed 
1 c granulated sugar  1/4 c fat-free milk 
6 ozs dried cranberries  1/4 c light margarine, softened 
1/2 c walnuts, chopped  2 whole eggs 
2 tsps baking powder  
Preheat oven to 350. Prepare a 8"x4" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, cranberries, walnuts, and baking powder. Mix well; set aside. In another mixing bowl, combine bananas, milk, margarine, and eggs . Mix well. Add to dry ingredients. Mix until all is moistened. Pour batter into prepared pan. Bake for one hour and 15 minutes, or until toothpick inserted in center comes out clean.
