Cranberry Apple Bread

Adapted from
12 servings

2 c Granny Smith apples, peeled and chopped  1/2 tsp baking soda 
1 1/2 c unbleached flour  1/2 c walnuts, chopped 
1 c fresh cranberries, halved  1/2 c water, cold 
3/4 c granulated sugar  1 whole egg 
2 tsps cinnamon  2 tbsps olive oil 
1 1/2 tsps baking powder  
Preheat oven to 350. Prepare a 8" x 4" loaf pan with cooking spray; set aside. In a mixing bowl, combine apples, flour, cranberries, sugar, cinnamon, baking powder, baking soda, and walnuts. Add water, egg, and oil. Mix until all is moistened. Pour batter into prepared pan. Bake for one hour, or until toothpick inserted into center comes out clean.
