Corn Meal Pancakes

10 servings

1 1/4 c  cornmeal  2  tsps  baking powder 
1  tbsp  honey  2  tsps  cinnamon 
1/4 tsp  salt  1  whole  egg 
1  c  water, boiling  5  ozs  fat-free evaporated milk 
1/2 c  unbleached flour  
Prepare skillet with cooking spray and heat on medium until hot. In a mixing bowl, combine cornmeal, honey, and salt. Slowly add water. Cover and let stand ten minutes. Stir in flour, baking powder, cinnamon, egg, and milk. Mix well. Ladle in the batter, using 2 or more tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for 2 minutes more.
