Chicken Bean & Rice Skillet

1 lb ground chicken breast skinless 8 ozs no-salt-added tomato sauce 
1/2 c onions, chopped 1/4 c water 
1/2 c bell peppers, chopped 2 tsps chili powder 
1/2 c celery, sliced 1 c long-grain white rice 
14 1/2 ozs canned crushed tomatoes 1/4 tsp salt 
15 ozs canned dark red kidney beans, undrained 4 ozs Monterey Jack cheese, shredded 
In a large skillet, cook chicken, onions, bell peppers, and celery until chicken is no longer pink. Stir in crushed tomatoes, kidney beans, tomato sauce, water, chili powder, and salt. Bring to a boil. Stir in rice. Cover and reduce heat. Simmer, stirring occasionally, ten minutes or until rice is done. Sprinkle cheese on top.
