Cherries Jubilee Cheesecake Bars

   Crust:  8  whole  maraschino cherries, drained and chopped 
18 1/4 ozs  cherry chip cake mix  2  drops  food coloring, red 
1/4 c  Country Crock Light Spread     Add to homemade frosting 
   Frosting:  16  ozs  fat-free cream cheese, softened 
3  c  powdered sugar  1  whole  egg 
1/4 c  margarine, softened  1/2 c  egg whites 
5  tbsps  fat-free milk  
Preheat oven to 325. Prepare a 13"x9" pan with cooking spray; set aside. In a mixing bowl, combine dry cake mix and spread until crumbly. Reserve one cup mixture. Press remaining crumb mixture into bottom of prepared pan; set aside. Meanwhile, to make frosting, combine powdered sugar, margarine, milk, cherries, and red food coloring. Mix until spreading consistency. Add cream cheese to frosting. Mix until smooth. Add egg and egg whites. Mix until combined. Pour over crust in pan. Sprinkle top evenly with reserved crumb mixture. Bake for one hour, or until set. Cool. Before serving refrigerate bars for two hours.
