Cheesy Tater Topper

Adapted from
4 servings

1 c fat-free milk 3 ozs mozzarella cheese, shredded 
1 tbsp cornstarch 2 c canned mixed vegetables, drained 
1/2 tsp dry mustard 4 med baking potatoes 
1/4 tsp salt baked and cut into quarters 
1/8 tsp black pepper  
In a small saucepan, combine milk, cornstarch, mustard, salt, and black pepper. Cook and stir until thickened and bubbly. Add cheese, stirring until melted. Stir in vegetables and heat through. Serve warm over baked pototoes.
