Cake Mix Pumpkin Breads

32 servings

18 1/4 ozs spice cake mix  2 tsps nutmeg 
1/4 c walnuts, chopped  15 ozs canned pumpkin 
1/4 c raisins  3/4 c egg whites, slightly beaten 
2 tsps cinnamon  1/3 c molasses 
Preheat oven to 350. Prepare two 9"x5" loaf pans with cooking spray; set aside. In a mixing bowl, combine cake mix, walnuts, raisins, cinnamon, and nutmeg. Stir in pumpkin, egg whites, and molasses. Mix until moistened. Pour batter evenly between loaf pans. Bake for one hour, or until toothpick inserted in center comes out clean.
I made this recipe using a yellow cake mix and a spice cake mix. Both turned out well.
