In a small bowl, combine cereal and milk; set aside. In a mixing bowl, combine flour, raisins, sugar, baking powder, cinnamon, baking soda, and salt. Mix well. Add cereal mixture, apples, water, egg, and olive oil. Mix until all is moistened. Line 14 microwave muffin cups with paper liners. Fill each cup 2/3 full with batter. Microwave six muffins at time on high for two minutes and 90 seconds or until toothpick inserted in center comes out clean; rotating muffin cups several times during cooking time.
