Bean Burger Bake

8 servings

1 lb ground chicken breast skinless 1/2 tsp salt 
1/2 c onions, chopped 1/2 c ketchup 
31 ozs canned dark red kidney beans, rinsed and drained 1 tbsp white vinegar 
15 1/2 ozs canned red beans, rinsed and drained 1 tbsp yellow mustard 
1/2 c light brown sugar, packed 1/2 c low-fat cheddar cheese, shredded 
Preheat oven to 350. Prepare a 2-quart casserole dish with cooking spray; set aside. In a large saucepan, cook chicken until no longer pink. Add onions, beans, brown sugar, salt, ketchup, vinegar, and mustard. Mix well. Pour mixture into prepared dish. Sprinkle cheese over top. Bake for 30 minutes or until cheese has melted.
