Baking Mix Whole Wheat Waffles

2 c low-fat baking mix  2 c fat-free milk 
1/2 c whole wheat flour  1 whole egg 
2 tbsps granulated sugar  1 tbsp olive oil 
1 tsp pumpkin pie spice  1 tsp pure vanilla extract 
Heat Belgian waffle iron and spray with cooking spray. In a liquid measure, combine baking mix, flour, sugar, and pumpkin pie spice. Stir in milk, egg, oil, and vanilla extract. Mix until blended. Pour half cup batter per waffle onto hot waffle iron. Bake for four minutes, or as directed from your waffle iron instructions.
