Applesauce Nut Bread

Adapted from
16 servings

2 c unbleached flour  1/4 tsp nutmeg 
1 c granulated sugar  1/8 tsp salt 
1/2 c pecans, chopped  1 c sweetened applesauce 
1 tsp baking soda  1/4 c egg whites, slightly beaten 
1 tsp baking powder  3 tbsps olive oil 
1 tsp cinnamon  3 tbsps fat-free milk 
Preheat oven to 350. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, walnuts, baking soda, baking powder, cinnamon, nutmeg, and salt. Add applesauce, egg whites, oil, and milk. Mix well. Spread into prepared pan. Bake for one hour, or until toothpick inserted in center comes out clean.
