Applesauce Loaves

18 1/4 ozs yellow cake mix  2 tbsps olive oil 
3 ozs fat-free vanilla pudding mix  2 tsps cinnamon 
1 c sweetened applesauce  1/2 tsp nutmeg 
3/4 c egg whites, slightly beaten  1 c raisins 
1/2 c water  
Preheat oven to 350. Prepare two 8"x4" loaf pans with cooking spray. In a mixing bowl, combine cake mix, pudding mix, applesauce, egg whites, water, oil, cinnamon, and nutmeg. Mix well. Fold in raisins. Spread batter evenly between pans. Bake for one hour, or until toothpick inserted in center comes out clean.
