Apple Pancakes Apple Pancakes

Adapted from New Vegetarian Cuisine
6 servings

1 1/4 c unbleached flour 1 c apples, shredded 
2 tsps baking powder 1 1/3 c fat-free milk 
1 tsp cinnamon 1/4 c egg whites, slightly beaten 
1/2 tsp nutmeg 1/2 c fat-free sour cream 
1/2 tsp ginger 1/2 c granulated sugar 
1/4 tsp cloves  
Prepare skillet with cooking spray and heat on medium heat until hot. In a mixing bowl, combine flour, baking powder, cinnamon, nutmeg, ginger, and cloves. In another mixing bowl, combine apples, milk, egg whites, sour cream, and sugar. Mix dry ingredients with wet ingredients just until moistened. Ladle in the batter, using two or more tablespoons per cake. Cook for two minutes, then flip carefully and cook for two minutes more.
